The Dawood basha recipe is actually one of the most common and favorite dishes in the Middle Eastern cuisine. In this recipe, we try to make a vegetarian version of the original recipe. The recipe fits those who are on a plant-based diet.

INGREDIENTS (servers 4 people)
400G or 1 can of red beans, rinsed and drained.
1 large onion finely chopped for the (meatballs) + 1 small onion finely chopped for (tomato paste).
4 garlic cloves, minced.
2 carrots, shelled and grated.
¼ cup of dry oatmeal .
Black flour (when needed).
1 tablespoon of soy sauce.
2 medium potatoes, peeled and cut into cubes.
2 large tomatoes.
2 tablespoon of tomato paste.
Spices: Cumin, dry coriander, paprika, salt, black pepper, and meat spices (optional).

The needed tools:
Food processor.
Butter baking paper.

We prepare the meat balls in a container over medium heat; we pitch a little of olive oil and we flip the chopped onion with the chopped garlic till the season. Then, we add the shelled carrots with spices: cumin, dry coriander, paprika, salt, black pepper, and meat spices. There is a mixture I usually use called "7 spices" that adds a delicious taste. We flip till carrots are tender crisp.
We refine the tinned beans and we carefully wash it.
By using the food processor, we add the beans, the oatmeal, and the mixture of onion and carrots, in addition to soy sauce.
We mix the ingredients and we watch out the mixture till it becomes homogeneous. We may add black flour for this purpose.
In the oven-pan, we line the meat balls in the butter baking paper then we leave it for 20 to 30 minutes.
We put the potatoes in the boiling water for 15 minutes after cutting them in 1 cm cubes, not thin cubes.
We get the meatball pan out of the freezer and then we bake it by the oven at 180 ° C. we may need to flip it from time to time.
Now, we prepare the Dawood basha sauce. We start flipping the onion with a little amount of olive oil in a container over medium heat.
We put 2 tomatoes in the blender with 2 cups of water.
When the onion completely wilts, we add the mixture of tomato using the refinery to get rid of the peels and the seeds of tomatoes.
We add 2 tablespoon of tomato paste and we add spices if desired.
We wait till the tomato paste boils. In the meantime, we refine the boiled potatoes from the water, then we add them to the bowl of tomato sauce. After this, we add the meatballs.
Now, we are done with the recipe, but we can add the mixture of tomato paste with meatballs and potatoes in the pan then we put them in the oven for 15 minutes to be more homogeneous. Serve with white rice (or brown rice) and enjoy.
