Pancakes are my sister's favorite food and she refused to accept the fact that she should live without them, so she tried hard to find the proper combination. The recipe is extremely simple and the only secret lies in choosing the right ingredients.

  • 1 - 1.5 cups of buckwheat flour (there might be more varieties but use the light one)..
  • 3 cups of soy milk.
  • 1table spoon coconut oil.
  • very little maple syrup - to taste.

  • Directions:
  • I prefer to pour everything into the food processor as it will all get mixed well.
  • Let the batter sit for approx. 5 minutes. If you have a good non-stick pan you do not need to pour any extra oil, but you might want to pour a little at least for the first pancake.
  • Heat the pan, pour/scoop the batter and tilt the pan in circular motion until the batter is evenly spread. Cook for 1-2 minutes or until the pancake turns little brown and flip to the other side.
  • You might need to pour extra flour or extra milk to adjust the batter in case it is too watery or too slow to spread on your pan.
  • You can serve it with fruits, vegan nutella, home made peanut butter, coconut cream, agave/maple syrup or any other of your favorite toppings.
