I like raw cakes because they are very easy to prepare and always turn out to be tasty. Here comes a recipe that I did for my sister's birthday - after she blew off the candles. Since it contains mostly dates and nuts, the cake itself is very filling and sweet.
5 cup of dates (soak them in water for around 10 minutes)
5 cup of walnuts or almonds
For the crust:
For the filling:
1 can (400ml) of coconut milk (refrigerate overnight or at least for 4 hours).
5 cup of cashew nuts (soaked overnight or at least for 4 hours).
2 ripe bananas.
1 tablespoon of maple or agave syrup.
Banana or berry fruit to decorate.
Juice from 1 lemon.
Fill your food processor with walnuts and dates and mix well to create a crust. The final product should be little bit crunchy from the nuts and sticky. Prepare a springform pan or a smaller baking dish and press the crust into it.
Next, prepare your filling. Fill the food processor with your soaked cashew nuts and crush them lightly. Then add bananas, maple syrup and coconut milk. When you take the coconut milk can from the fridge, it will have the cream and liquid part separated.
Use only the cream part that you easily scoop out of the can. Mix well until your mixture is nice and creamy. Spread evenly on top of your crust.
Refrigerate the whole pie for around 8 hours or overnight. If you want to speed up the process, you can put the pie into a freezer, but remember it will then take at least 30 minutes before you can cut and serve it. You can decorate with bananas or berry-type fruit.
